There's this really great snack from Northern China called Tanghulu.

And as a chef, it's right up my alley.

Not only because I speak some Mandarin Chinese, but also because it's really fun to make and it's delicious.

Traditionally, this is made with hawthorn, but you can literally make it with any fruit and it's the same process no matter how you do it.

It's actually very simple.

You make a mixture of water and sugar and cook this down until the sugar retains very low amounts of water.

You bring it to what's called the hard crack stage.

This basically means that when the sugar cools down, it's gonna make a crunch if you bite into it or tap it.

Think of something like the top of a creme brulee or a lollipop.

All you need to do is bring the sugar to a certain temperature.
